Cashew Coconut Granola

Okay guys. FULL Disclaimer, I have never made my own granola before. With that being said, I’m actually impressed by how easy this recipe was and it turned out extremely tasty! I looked at a bunch of recipes online and tweaked them all into this recipe . I was trying to go for a Healing Home Foods vibe with this, I think mine came out more crunchy than their’s but the flavor was a slight resemblance of their cashew coconut flavor.

If you know me, granola is like…addictive and if I have a bag sitting at home it is not there very long, so I figured…learn how to make my own so I never have to go without granola! SUCCESS. This recipe took under 15 minutes and makes about 4 cups of granola which is about a week of every day smoothie bowls haha. Tested and approved.

Also we make this on the stovetop instead of in the oven so there is no wait time and clean up is so simple!

INGREDIENTS

Coconut Cashew Granola

Serving Size (About 4 Cups)

  • 1 CUP GLUTEN FREE ROLLED OATS (You can use any rolled oats but I prefer Gluten Free)

  • 1/2 CUP SHREDDED COCONUT FLAKES, UNWEETENED

  • 1/2 CUP ROASTED SALTED CASHEWS

  • 1/4 CUP MAPLE SYRUP

  • 1 HEAPING TSP. CASHEW BUTTER

  • 2 TBSP. COCONUT OIL

  • 1.5 TSP. VANILLA

  • 1 TSP. CINNAMON

  • 1/4 TSP. SALT

*** I ALWAYS USE ORGANIC INGREDIENTS WHEN I CAN.  OF COURSE I UNDERSTAND IF THIS IS NOT FEASIBLE FOR YOUR BUDGET, BUT BUYING ORGANIC WHEN YOU CAN IS ALWAYS PREFERRED FOR HIGH AMOUNTS OF MAGIC.

RECIPE

  1. ADD OATS, COCONUT FLAKES, CASHEWS, CINNAMON AND SALT (ALL DRY INGREDIENTS) TO A BOWL AND MIX TOGETHER.

  2. PUT COCONUT OIL AND CASHEW BUTTER IN A LARGE PAN ON MEDIUM HIGH HEAT UNTIL MELTED (YOU CAN LEAVE A FEW SMALL GLOBS OF CASHEW BUTTER UN DISSOLVED BECAUSE THEY WILL SQUISH INTO THE GRANOLA AND MAKE IT EXTRA DELICIOUS).

  3. ADD THE MAPLE SYRUP AND VANILLA TO THE MELTED MIX IN THE PAN, THEN ADD THE DRY INGREDIENTS. STIR CONTINUOUSLY UNTIL ALL INGREDIENTS ARE COMBINED AND GENTLY TOASTY/GOLDEN BROWN. (MAKE SURE TO NOT OVER-COOK, THE OATS WILL BURN. WATCH THESE BAD BOYS LIKE A HAWK).

  4. LAY OUT PARCHMENT PAPER AND POUR GRANOLA OVER PARCHMENT PAPER TO COOL.

  5. SPRINKLE YOUR GRANOLA OVER ANY OF MY OTHER SMOOTHIE BOWL RECIPES (SHAMELESS PROMO HERE, HERE OR HERE) OR ADD SOME NON-DAIRY MILK AND HAVE FOR BREAKFAST. MAYBE CRUNCH ON THIS GRANOLA FOR AN AFTERNOON SNACK OR PLACE ATOP YOUR GREEK YOGURT PRETENDING YOU ARE SUMMERING IN MYKONOS WATCHING THE SUNRISE OVER THE AEGEAN SEA. YOU KNOW, MAKE IT FASHION.
