Butternut Squash Soup

A good friend gifted me this recipe years ago and it's still my favorite fall soup.  The best part is how EASY and QUICK this recipe is. It came from a family recipe so over the years I’ve changed a “dash” of this and a “pinch” of this to actual measurements that I find work well. I hope you love it as much as I do!

Best Squash Soup Ever..

I mean, I really like it… I make it every fall.

INGREDIENTS

  • 1 LARGE BUTTERNUT SQUASH, PEELED AND SEEDED

  • 1 ONION, DICED

  • 2 APPLES, PEELED AND DICED

  • 1 32 OZ CONTAINER OF CHICKEN OR VEGETABLE STOCK

  • 1-3 CUPS WATER

  • 1/2 TSP NUTMEG

  • 1/2 TSP CINNAMON

  • 1 TSP BUTTER, GHEE OR COCONUT OIL

  • SALT TO TASTE

*** I ALWAYS USE ORGANIC INGREDIENTS.  OF COURSE I UNDERSTAND IF THIS IS NOT FEASIBLE FOR YOUR BUDGET, BUT BUYING ORGANIC WHEN YOU CAN IS ALWAYS PREFERRED FOR HIGH AMOUNTS OF MAGIC.

MAGIC STEPS

  1. SAUTEE ONION IN LARGE POT IN BUTTER, GHEE OR COCONUT OIL. WHEN ONIONS TURN CLEAR ADD THE BROTH, 1-2 CUPS OF WATER (DEPENDING ON HOW MUCH SOUP YOU WANT), SQUASH, APPLES AND SPICES. BRING TO A BOIL.

  2. LET SIMMER FOR 1 HOUR OR UNTIL SQUASH IS SOFT.

  3. BLEND USING HAND HELD BLENDER OR ACTUAL BLENDER. IF SOUP IS TO THICK, ADD THE REST OF THE WATER LITTLE BY LITTLE UNTIL THE CONSISTENCY IS TO YOUR LIKING. ADJUST SPICES TO TASTE.

  4. ENJOY BY YOUR ROARING FIREPLACE WHILE SNOW GENTLY FALLS OUTSIDE AND LIFE SEEMS TO COME TO A PERFECT HALT AS THE FLAVORS OF THE SOUP COMBINE TO CREATE AN EXPLOSION OF MAGNIFICENT TASTE. **Just a suggestion.
