SUNSHINE JUICE (Vitamin C Boost!)

SUMMER. IS. COMING. We all want to stay healthy inside and out and we want to keep it fun, am I right? ENTER Sunshine Juice! This juice is DELICIOUS, simple (only 3 ingredients) and packed with nutrients to keep your immune system boosted and your skin glowing all summer long.

Pineapple is my favorite fruit so I’m a little biased; but I think adding pineapple to just about anything transforms the recipe from good to MAGICAL. Not only does pineapple have that tropical sweet vibe but this fruit packs in the nutrition. Lets break it down:

  • Vitamin C - Guys I can’t rave about vitamin C enough and pineapples actually contain MORE vitamin C than oranges! That’s right, around 400mg of Vitamin C more to be exact! Vitamin C boosts our immune system, is a powerful antioxidant AND promotes glowing skin (you’ll actually find it in a lot of skincare lines)!

  • Bromelain - This is one of my favorite things about pineapple! Ever eat a pineapple and get the tingly sensation on your tongue? That’s the Bromelain! I discovered this when I worked for a holistic doctors office through college. Bromelain is an amazing little enzyme that can help aid your digestion, reduce inflammation especially sinus issues AND boost your immunity!

Next up we have trusty orange! We all know and love her and she’s a morning show stopper in many countries. Who hasn’t heard of orange juice in the morning! Let’s dive into WHY she’s such a winner!

  • Vitamin C - Just like the pineapple oranges pack a big Vitamin C punch!

  • Vitamin B1 & B9 - Providing aid in cell growth and assisting in the breakdown of essential amino acids!

  • Antioxidants - Antioxidants are compounds that fight free radicals to prevent oxidative stress and protect against chronic disease. Antioxidants are believed to play a role in the development of conditions like heart disease, cancer and diabetes (Source Dr. Axe.com).

  • Boosted Brain Function - The flavonoids found in oranges could help preserve cognitive function and prevent neurodegenerative disorders like dementia or Alzheimers A study in the British Journal of Nutrition even found that a higher intake of citrus fruits was linked to improvements in cognitive function among older adults (Source Dr. Axe.com).

Finally we’ve got Turmeric! The secret ingredient that finishes off our sweet sunshiny nectar. Turmeric is something we’ve been using in our family forever, it’s a beautiful root that can be used in a powdered spice, think Indian flavored cuisine YUM and it can also be grated or juiced right from the root which is what we will be doing today! Some benefits of turmeric are:

  • Reduced Inflammation - Turmeric is full of Curcumin which naturally reduces inflammation! My cousin has called it nature’s Advil haha!

  • Improved Brain Function - Turmeric is said to increase certain levels of BDNF which is a growth hormone that functions in the brain. Certain degenerative conditions have been linked to a decrease of BDNF.

  • Healthy Heart - Turmeric can help improve the function of blood vessel lining leading to a healthier heart!

INGREDIENTS

Serving Size; About 16 Oz depending on size of fruit. Double the recipe for a pitcher!

  • 1/2 FRESH PINEAPPLE

  • 3 NAVEL ORANGES

  • 1 INCH OF TURMERIC ROOT (You can substitute for 1 Tsp. of Turmeric Powder)

*** I ALWAYS USE ORGANIC INGREDIENTS.  OF COURSE I UNDERSTAND IF THIS IS NOT FEASIBLE FOR YOUR BUDGET, BUT BUYING ORGANIC WHEN YOU CAN IS ALWAYS PREFERRED FOR HIGH AMOUNTS OF MAGIC.

  1. SLICE THE TOP AND BOTTOM OF THE PINEAPPLE OFF AND CORE YOUR PINEAPPLE.

  2. PEEL YOUR ORANGES

  3. SLICE 1 INCH OFF OF YOUR TURMERIC ROOT (NO NEED TO PEEL IT). IF YOU ARE USING POWDER, MEASURE OUT 1 TSP. TURMERIC POWDER AND SET ASIDE.

  4. TURN JUICER ON AND PLACE PINEAPPLE, ORANGES AND TURMERIC ROOT IN JUICER! VOILA! JUICE!

  5. **IF YOU USED POWDERED TURMERIC. ONCE THE PINEAPPLE AND ORANGES ARE JUICED WHISK TURMERIC POWDER IN UNTIL BLENDED THROUGHLY. ENJOY!

  6. SIP THIS TROPICAL SASSY JUICE WITH YOUR AVOCADO TOAST IN THE MORNING. OR GET REAL BOUJEE AND PUT ON THAT BATHROBE, ENVISION YOURSELF IN ST. TROPEZ ON YOUR YACHT DRINKING IN THIS TASTY YET ELEGANT JUICE AS YOU GLISTEN IN THE MORNING SUN.

In all seriousness this juice is wonderful to keep on hand in the fridge. I’ve been making it for my family and even the most skeptical family member enjoys having it with his breakfast. Double the recipe to make a full pitcher because his could also be a great juice for entertaining! Add a little bit of organic champagne and you’ve got a healthy mimosa!
