This is my comfort food for when I want to be healthy but I need a hug. This parfait blends the cool crisp energizing energy of a fruit smoothie with the warm cozy grounded essence of oatmeal. My mom always tells me to eat oatmeal when I’m stressed but… I NEED my morning smoothie; voila the oat parfait was born! This is great option for those of us needing a heavier breakfast. If we’re about to head to the gym this smoothie has your back, if we are having a big presentation at work but won’t have time to snack or have lunch, this smoothie will keep you full longer. If you just need some comfort via food and you’re trying to not hit the drive through for that Wendy’s Frosty…whip out this recipe instead!
I always forget about this recipe and then it magically creeps back into my life and I wonder…..why did I forget about this deliciousness in the first place.

INGREDIENTS
Serving Size (1 large parfait)
OATMEAL PORTION
1/2 CUP ORGANIC QUICK OATS
1 CUP OAT MILK (I use Pacific Brand Foods - Oat Milk Original. I’ve been buying this for years before oat milk was soOo cool; Pacific tastes the best to me. and its organic.)
1/4-1/2 Tsp. SALT (Depending on your preference, I like it a little more salty so I err on the 1/2 tsp. side, but I know that’s not for everyone. You do you boo boo).
1/2 Tsp. VANILLA POWDER OR 1 Tsp. Vanilla extract (Either is fine, I prefer the powder because you use less and it tastes more potent).
1/2 Tsp. CINNAMON
1 Tsp. ALMOND BUTTER (You can use any nut butter that you like or have on hand). IF YOU HAVE A NUT ALLERGY TRY GRANOLA BUTTER BY KWEEN BRAND. ITS LEGITIMATELY AMAZING YOU WILL NOT REGRET IT. ALSO DON’T COME FOR ME ONCE YOU ARE ADDICTED.
SMOOTHIE PORTION
1/2 FROZEN BANANA
1.5 Cup Frozen Strawberries
1 CUP OAT MILK (We know I’m partial to Pacific Brand Foods Oat Milk by now, however improvising & creativity is always encouraged here)
What’s fun about this recipe is you can really customize it however you want. You can sub ANY of my other smoothie recipes for this portion of this recipe depending on what your tastebuds want.
*** I ALWAYS USE ORGANIC INGREDIENTS. OF COURSE I UNDERSTAND IF THIS IS NOT FEASIBLE FOR YOUR BUDGET, BUT BUYING ORGANIC WHEN YOU CAN IS ALWAYS PREFERRED FOR HIGH AMOUNTS OF MAGIC. There she goes again…
RECIPE
PART I. (OATS)
POUR OAT MILK INTO A POT ON STOVETOP AND HEAT UNTIL BOILING.
ONCE BOILING ADD IN QUICK OATS AND SALT.
BOIL AND STIR FREQUENTLY FOR ABOUT ONE MINUTE; OR UNTIL OATS HAVE ABSORBED MILK.
REMOVE OATS FROM HEAT AND ADD IN VANILLA, CINNAMON & ALMOND BUTTER.
STIR ALMOND BUTTER INTO THE MIXTURE UNTIL BLENDED FULLY.
COVER AND LET SIT WHILE YOU MAKE PART TWO.
RECIPE PART II. (SMOOTHIE)
POUR OAT MILK INTO BLENDER.
ADD REMAINING SMOOTHIE INGREDIENTS (AKA FROZEN BANANA AND STRAWBERRIES).
BLEND.
RECIPE PART III. (THE GREAT MELDING)
GRAB A WIDE MOUTH MASON JAR (If you don’t have one that’s fine. You can use a bowl, a large coffee mug, anything you have on hand. I like the wide mouth mason jar because you can see the layers and its aesthetically pleasing).
SPOON A LAYER OF FINISHED OATS ONTO THE BOTTOM.
SPOON A LAYER OF SMOOTHIE OVER THE OATS.
CONTINUE ALTERNATING UNTIL JAR IS FULL.
WRAP YOURSELF IN A COZY BLANKET. POP ON THOSE SLIPPERS. PUT ON SUNDAY MORNING CARTOONS AND NIBBLE ON THIS TASTY TREAT. SELF CARE BABY. SAVOR THIS PARFAIT OF DELICIOUSNESS, LET IT COMFORT YOU. (OR…YA KNOW…TAKE IT TO GO LOL).
